Executive Sous Chef Full Time NEW

We are seeking an experienced and passionate Executive Sous Chef to support the Head Chef in leading our culinary team and ensuring the highest standards of food quality, presentation, service, and kitchen operations.

Key Duties & Responsibilities

• The Executive Sous Chef will assist the Executive Chef in the overall management and day-to-day operation of the kitchen.
• The Executive Sous Chef will lead, motivate, and develop the culinary team, fostering a positive, professional, and high-performing working environment.
• The Executive Sous Chef will take responsibility for the kitchen in the absence of the Head Chef, ensuring smooth and efficient service.
• The Executive Sous Chef maintain consistently high standards of food quality, preparation, presentation, and portion control.
• The Executive Sous Chef ensure all dishes are prepared and delivered in accordance with established recipes, menus, and quality standards.
• The Executive Sous Chef will work closely with the Executive Chef on menu development, seasonal specials, and new culinary concepts.
• The Executive Sous Chef will monitor food costs, portion sizes, wastage, and stock levels to support effective cost control and profitability.
• The Executive Sous Chef will assist with ordering, receiving, and storing food supplies, ensuring quality and correct stock rotation.
• The Executive Sous Chef will ensure full compliance with food safety, HACCP, hygiene, health & safety, and allergen procedures.
• The Executive Sous Chef will maintain excellent standards of cleanliness and organisation throughout all kitchen areas.
• The Executive Sous Chef will manage kitchen staffing levels, daily briefings, section allocation, and operational requirements.
• The Executive Sous Chef will train, coach, and mentor junior chefs and kitchen team members, supporting their professional development.
• The Executive Sous Chef will monitor team performance and ensure agreed standards and procedures are consistently followed.
• The Executive Sous Chef will work collaboratively with the Front of House, Events, Purchasing, and Management teams to ensure an exceptional guest experience.
• The Executive Sous Chef will remain calm and organised under pressure, particularly during busy service periods and high-volume events.
• The Executive Sous Chef will assist with kitchen administration, including stock control, temperature records, cleaning schedules, and other operational documentation.
