Sommelier Full Time

Job Purpose

The Sommelier is responsible for delivering an exceptional wine and beverage experience to hotel guests. The role involves managing and developing the wine selection, providing expert recommendations, ensuring excellent wine service, and supporting the hotel’s food and beverage team in achieving high standards of guest satisfaction and commercial performance.

Key Responsibilities

• Deliver exceptional wine service, including professional presentation, opening, decanting and serving.
• Provide expert wine recommendations and food pairings tailored to guests’ preferences and budget.
• Manage the hotel’s wine list, including selection, pricing, stock control and supplier relationships.
• Maintain high standards of wine storage, cellar organisation and product quality.
• Train and support Food & Beverage colleagues in wine knowledge, service and upselling.
• Drive wine sales and profitability while maintaining excellent guest satisfaction and service standards.

Essential Skills & Experience

• Previous experience in a sommelier, wine service or senior Food & Beverage role.
• Strong knowledge of wines, wine regions, grape varieties and food pairing.
• Excellent communication and interpersonal skills.
• A genuine passion for wine and hospitality.
• Ability to provide confident and professional guest service.
• Good organisational and stock-control skills.
• Ability to work effectively as part of a busy hotel team.
• Professional, personable and well-presented manner.
• Flexibility to work evenings, weekends and holidays as required.

Desirable Qualifications

• WSET qualification or equivalent wine qualification.
• Sommelier certification.
• Relevant hospitality or Food & Beverage qualification.
• Previous experience in a luxury hotel, fine-dining restaurant or high-end hospitality environment.
